5 Recipes to Make Meat Free Monday the Most Delicious Day of the Week

Kicking off with our first blog back we’ve got some ripper ideas for using avos to help you cut back on meat (if you want to).

Are you trying to eat less meat but you struggle with ideas for meat free recipes? I hear you. I grew up on meat and 3 veg and my brain just always picks the meat first when I am thinking about meals to cook. But we are trying to eat less meat so I thought I’d share with you some recipe ideas with avocados that will solve your meat free night problems.

 

We’ve introduced meat free Mondays so I know that at least that is one night that we are definitely not having meat and then other nights are bonus.

 

Here are my favourite ideas for delicious meat free Mondays

 

  1. Scrambled eggs with avocado and tomato mixed through. 

  2. A bowl of goodness – stir fry kale, spinach and mushrooms, in some sesame oil, cook soba noodles in boiling water then add to the pan and mix with the greens and mushrooms. Tip in to a bowl, sprinkle with pumpkin seeds and dice a whole avocado on top. You can sprinkle with some parmesan and chilli, drizzle some sweet chilli sauce or oil and if it’s not meat free Monday or if you don’t count fish, you can add some canned tuna or a piece of salmon. Deeelicious!

  4. This chilled avocado soup recipe for the warm summer evenings..

  5. And.. when all else fails just make avocado toast. Especially if you are short on time. Ideally use some yummy grainy bread.

In our house if you don’t like the dinner that’s on offer you can have avocado toast instead. As a mother, if the kids eat avo I feel like my work is done.
